Oh My Goodness, was my first thought when I bit into one of these Banana Crumb Muffins. These are so delicious, was my second thought. If you are a fan of banana muffins, bread, or just bananas in general then this is a must try recipe for you! These muffins are moist with the perfect amount of banana flavor and the crumb topping just puts them over the top. I found the recipe in my Taste of Home 30-Minute Cookbook. These muffins are definitely going on to my favorite muffins list!
The ingredients are:
- 1-1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 large ripe bananas, mashed
- 1 egg
- 3/4 cup sugar
- 1/3 cup butter, melted
TOPPING:
- 1/3 cup packed brown sugar
- 1 Tablespoon all-purpose flour
- 1/8 teaspoon ground cinnamon
- 1 Tablespoon cold butter
- In a large bowl, combine the first four ingredients.
- Combine bananas, egg, sugar and butter; mix well. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups three-fourths full.
- Combine the first three topping ingredients; cut in butter until crumbly. Sprinkle over muffins.
- Bake at 375 degrees for 18-20 minutes or until muffins test done (mine only took 18 minutes). Cool in pan 10 minutes before removing to a wire rack.
Yield: about 1 dozen

Anything banana appeals to me! I’ve never made the muffins with the topping. I will have to give it a try.
I’m with you, I love bananas! I hope you try it and enjoy them as much as I did!
I just made “Banana Crunch Muffins” this past week but these look so fantastic that I might need to try them right away! I always have lots of black bananas sitting around and those make the best muffins, breads, and cakes. I’m definitely going to try this–thanks for sharing!
I always have very ripe bananas at my disposal as well. If you make them I hope you enjoy them as much as we did. Your welcome, and thank you for commenting!
Beautiful looking muffins. Love the crum top!
Thank you! The crumb top did give them that little extra yum!
